Ingredients

For the Marinade:

1 whole chicken (about 1–1.2 kg, skin removed and cleaned)

2 tbsp ginger-garlic paste

1 cup thick yogurt

2 tbsp lemon juice

2 tbsp olive oil (or ghee for richer flavor)

2 tsp red chili powder

1 tsp turmeric powder

2 tsp coriander powder

2 tsp cumin powder

1 ½ tsp garam masala powder

1 tsp black pepper powder

1 tsp paprika (optional, for color)

Salt to taste

For Garnish:

Fresh coriander leaves

Lemon wedges

Onion rings

Instructions

Prepare the Chicken

Wash and pat dry the chicken. Make deep slits on the chicken to allow the marinade to penetrate well.

Make the Marinade

In a large bowl, mix yogurt, lemon juice, olive oil, ginger-garlic paste, and all the powdered spices. Whisk until smooth.

Marinate

Rub the marinade generously all over the chicken, making sure it gets into the slits.

Cover and refrigerate for at least 4 hours (overnight for best results).

Cooking Options

Oven: Preheat to 200°C (400°F). Place the chicken on a baking tray, cover with foil, and roast for 35–40 minutes. Remove foil and roast another 20–25 minutes until golden brown.

Grill/Pan: Heat a grill pan, brush with oil, and cook on medium heat, turning occasionally until fully cooked.

Charcoal (Authentic): Roast the marinated chicken over low charcoal heat, turning frequently, until juicy and smoky.

Serve

Place the roasted chicken on a serving plate. Garnish with onion rings, lemon wedges, and fresh coriander.

Serving Suggestions

Pair Masala Shawarma with saffron rice, garlic naan, or buttered parathas.

Add a side of mint chutney or garlic sauce for dipping.

A fresh cucumber and tomato salad complements the rich, spicy flavors perfectly.

Tips for Perfect Shawarma

Marinate overnight for maximum flavor.

If using an oven, baste the chicken with melted butter or ghee halfway through roasting.

For an extra smoky touch, place a piece of hot charcoal in a small bowl, set it in the chicken pan, drizzle with a little ghee, and cover for 5 minutes.

Masala Shawarma is more than just a roast chicken—it’s a celebration of spices, culture, and comfort. Whether you serve it for a festive meal or a cozy dinner, this recipe is sure to win hearts at the table.
