Ingredients


1 lb large shrimp, peeled and deveined (tails on)


1 cup shredded coconut (sweetened or unsweetened)


1 cup panko breadcrumbs


½ cup all-purpose flour


2 large eggs


½ tsp garlic powder


½ tsp paprika


Salt & pepper to taste


Oil for frying (or use air fryer option)


Instructions


Prep the breading stations:


Bowl 1: Flour, salt, pepper, garlic powder, paprika.


Bowl 2: Beaten eggs.


Bowl 3: Mix shredded coconut + panko breadcrumbs.


Coat the shrimp:

Dredge each shrimp in flour, dip into the egg, then press into the coconut–panko mixture until fully coated.


Fry:

Heat oil in a pan to 350°F (175°C). Fry shrimp 2–3 minutes per side until golden and crispy.

Air Fryer: 400°F for 8–10 minutes, flipping halfway.

Baked: 425°F for 12–15 minutes.


Serve:

Enjoy with sweet chili sauce, mango dipping sauce, or pineapple salsa.
